Dessert - Lemon Caramel Custard

Ingredients
- Garnish:
- 10 egg yolks
- 1/2 cup sugar
- Zest from 2 Lemons (finely grated) or substitute 2 tsp Vanilla Extract (for Creme Brulee')
- 2 cups whipping cream
- 1 teaspoon vanilla extract (may substitute with 1/2 vanilla bean)
- 16 strawberry slices (serve 4 slices per serving or more depending on preference)
- powdered sugar
- 4 mint leaves

Preparation
Step 1
1. Mix the egg yolks and sugar in a mixing bowl.
2. Add cream, vanilla, and lemon zest while mixing.
3. When thouroughly mixed, pour into 4 individual custard dishes.
4. Place each dish on the 4 inch rack and cook on power level 7 for 20 minutes. If custard is not done, cook an additional 5 - 10 minutes. Poke the center of the custard with a toothpick; if it is done, the toothpick will come out clean.
5. Once completely cooled, sprinkle one spoonful of sugar over each custard.
6. Use a hand-held propane torch to melt sugar until caramelized.
7. Refrigerate custards until chilled.
8. Just before serving, sprinkle powdered sugar on each custard. Arrange strawberry slices around each plate.
9. Place a mint leaf on each custard to complete the garnish.
