Bread - Pumpkin Bread/Muffins

Ingredients
- 1 package of yellow cake mix
- 2 eggs (slightly beaten)
- 3 bananas (peeled) Or 2 cups of pumpkin (approximately 1 can)
- 1 cup milk
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1/2 cup vegetable oil
- 2 tablespoons butter

Step 1
Mash the bananas or pumpkin in a large bowl. Add eggs, milk, cinnamon, oil and nutmeg. Mix well. Slowly add the cake mix a little at a time until mixture is complete. Fill 2 miniature loaf pans two-thirds full and pour the remaining mixture into a cupcake tin to
make 4 cupcakes. Place both the loaves and the cupcakes on the 1” rack and bake on power level HI for 12 minutes.
Place 1 tablespoon of butter on the top of each loaf. Tent the loaves with foil allowing room for the mixture to rise. Continue baking both on power level HI
for an additional 12 minutes or until golden brown.
Alternatives:
• Roll tops of muffins and bread with crushed walnuts, pecans or
almonds for the final touch.
• Roast your nuts right in the NuWave Oven. Place nuts on the liner

5 minutes or until golden brown.
