Spiced lentil topping

Ingredients
- 1 tbsp olive oil
- half onion finely chopped
- 1 small clove garlic minced
- 1 tsp ground ginger
- 1/2 tsp ground turmeric
- 1/2 tsp ground cumin
- pinch salt, cayenne pepper
- 1 cup dried red lentils
- half can (28oz/796ml can) diced tomatoes
- 1 1/2 tsp lemon juice
- 2 tbsp chopped fresh coriander or parsley

Step 1
In a saucepan, heat oil over medium heat, fry onion, garlic, ginger, turmeric, cumin, salt and cayenne, stirring often until onion is softened, about 5 minutes.
Sitr in lentils and tomatoes; bring to boil. Reduce heat, cover and simmer, stirring often, until lentils are softened but still hold shape, 20 minutes. Sir in lemon juice, let cool slightly. Stir in coriander.
Can refrigerate in airtight container for up to 2 days, reheat to serve.
