Lemon Mascarpone Icebox Cake

Delicious make-ahead dessert. All ingredients can be found at Trader Joe's.

Ingredients

  • 3 Cups Trader Joe's chilled heavy cream
  • 1 Jar Trader Joe's Lemon Curd, divided
  • 1/4 Cup granulated sugar
  • 1 Cup Trader Joe's mascarpone cheese (about 9 oz) at room temperature
  • 1 Box Meyer Lemon cookie thins
  • Thinly sliced lemon, fresh sliced berries (optional for garnish)
  • Special equipment: 9x4 Loaf Pan or 9 inch springform pan

Preparation

Step 1

Beat 2 Cups cream wit 3 Tablespoons sugar in a bowl with an electric mixer at medium speed until it just holds soft peaks, 2-4 minutes. Reduce speed to low and then add mascarpone and 6 Tablespoons lemon curd mixing until combined.

If using a loaf pan, line bottom and sides with plastic wrap. Spread 1 1/4 Cups mascarpone mixture evenly on bottom and sides of the loaf pan. Make a stack of cookies spread with remaining mascarpone mixture (looks like poker chips) and align 2 rows, side by side to fill loaf pan. Spread any remaining cream over the top of cookie rows. Cover with plastic and refrigerate at least 8 hours.

For the springform pan, spread 1 1/4 Cups mascarpone mixture evenly in bottom of pan and cover with cookies, overlapping if necessary. Spread with another 1 1/4 Cups mascarpone mixture, followed by more cookies arranged in same manner. Spread remaining mascarpone mixture on top. Smooth top with metal offset spatula, then cover pan with foil and refrigerate covered, until sa sharp knife inserted into center cuts through softened wafers easily, about 8 hours.

Beat remaining cup cream until soft peaks form then add remaining 3 Tablespoons lemon curd beating until thick and spreadable adjusting sweetness to taste with a few more tablespoons of sugar, if you like -- be careful not to over beat.

Peel plastic wrap back and turn out loaf onto serving platter. Frost liberally with whipped cream. Slice on a slight diagonal to expose layers of cookies and garnish with berries if desired. Alternately, remove ring from springform pan and frost with whipped cream. Garnish with berries and lemon if desired. Serve cold.
