Ground Beef Zucchini Sauce 0 Picture

Ingredients

  • 1 lb ground beef
  • 1/2 med onion, diced
  • 1 tsp minced garlic
  • 1 can whole kernel corn, drained
  • 1 can diced tomatoes, undrained
  • 1 medium zucchini, halved and sliced
  • 1 28 oz can tomato sauce
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/4 c grated Parmesan cheese

Preparation

Step 1

In a skillet, cook the beef, onion and garlic over medium heat until meat is no longer pink; drain.

Stir in the corn, tomatoes, zucchini, sauce, basil, oregano, salt and pepper. Cover and simmer for 10-15 minutes or until heated through and zucchini is tender. Sprinkle with Parmesan cheese.
