Ingredients
- 1 bunch green onions, thinly sliced
- 1 cup all-purpose flour
- 8 cups of hot water
- 2 ounces Minors ham base...this is one tablespoon
- 3 tablespoons sugar
- 1 pound of potatoes (about 3 medium) peeled and diced
- 1/4 cup white vinegar (I use less)
- 1 cup half and half (I use Fat Free)
- Garnishes...bacon, green onions, cheese, hard boiled eggs
Preparation
Step 1
In a soup pot, cook the bacon until lightly browned. Do not drain fat. Stir in the onions and saute for 2 minutes. Add the flour, stirring until well blended and evenly cooked 2-3 minutes. At this point you will say.."What the heck is this crap"...just stir. Remove from heat and gently simmer 10-15 minutes until potatoes are tender..( I d it 10 mins.) Add vinegar and mix well. Let simmer two minutes. Add half and half abd cook stirring, until soup comes to a simmer...serve with garnishes.
