Curried Chicken Salad

Ingredients
- 2 parts Sour Cream (2/3 cup)
- 1 part Mayonnaise (1/3 cup)
- Pepper – at least a teaspoon if not more
- Salt – teaspoon (more or less)
- Few dashes of Poultry Seasoning (not much)
- 1 1/2 Tbsp Curry Powder (I use Cains)
- A dash or two of Cayenne Pepper
- 1 bunch green onions – finely diced with the “whites” of the onion
- 2-3 stalks of celery, finely chopped / diced
- 1/2 cup or more of chopped cashews
- 1 can of chicken, shredded (you can add more if you like), or use 1 or 2 cups of baked or rotisserie chicken, diced, chunked, or shredded
- Handful of grapes, halved (optional)

Preparation
Step 1
2 parts Sour Cream (2/3 cup)
1 part Mayonnaise (1/3 cup)
Pepper – at least a teaspoon if not more
Salt – teaspoon (more or less)
Few dashes of Poultry Seasoning (not much)
1 ½ Tbsp Curry Powder (I use Cains)
A dash or two of Cayenne Pepper
Whisk until fully incorporated. Adjust seasonings. With this one, the curry is the key. You may end up adding as much as 2 Tbsp if not more. Don’t worry, curry isn’t that hot.
Let stand while you cut up and gather the other ingredients:
1 bunch green onions – finely diced with the “whites” of the onion
2-3 stalks of celery, finely chopped / diced
½ cup or more of chopped cashews
1 can of chicken, shredded (you can add more if you like), or use 1 or 2 cups of baked or rotisserie chicken, diced, chunked, or shredded
Handful of grapes, halved (optional)
I’m not big on grapes in my salad, so I don’t usually put them in.
This stuff is over $5 a pound at Petty’s! And mine is MUCH better!!
