Ingredients
- 3 lb. vine-ripened tomatoes (red, orange, and yellow) seeded and quartered
- 1 box (16 oz.) orzo, cooked
- 1/2 cup olive oil
- 1/3 cup minced chives
- 6 tbsp chopped fresh basil
- 4 cloves garlic, minced
- 1 tbsp grated lemon zest
- Salt and pepper to taste
- 1 cup crumbled feta cheese
Preparation
Step 1
In large bowl combine tomatoes and orzo.
In small bowl combine oil, herbs and lemon zest.
Pour over orzo and toss well.
Season with salt and pepper, sprinkle with feta.
