Ingredients

  • 1 pound spareribs OR: baby back ribs
  • 1 onion
  • 2 whole cloves
  • 1/4 cup soy sauce
  • 2 teaspoons leaf marjoram, crumbled
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • Barbecue sauce (see sauce recipes)

Preparation

Step 1

Plan on 3/4 to 1 pound of ribs per serving. Use 1/4 cup barbecue sauce per pound of ribs.
Bake at 350 for 30 minutes.



1. Rinse ribs. Cut into 3-inch sections. Place
in large saucepan; add water to cover.


2. Peel onion; press cloves into onion. Add
to saucepan along with soy sauce, mar
joram, salt and pepper. Bring to boiling.
Lower heat; simmer 50 minutes or until
tender. Drain well.


3. Preheat oven to moderate (350).


4. Cut ribs into single rib pieces, or leave in
3-inch sections. Arrange in single layers
on rack in roasting pan.


5. Measure 1/4 cup barbecue sauce per
pound of ribs. Brush half the barbecue
sauce on one side of the ribs.


6. Bake ribs in preheated moderate oven
(350) for 15 minutes. Turn ribs over.
Brush remaining sauce on ribs. Bake 15
minutes or until thoroughly cooked at
thickest part.


7. Preheat broiler. Brush ribs with any sauce
in bottom of pan. Broil until crisp and
well browned on both sides. Serve with
additional barbecue sauce for dipping.
