- 1 1/2 cups warm water
- 1 package yeast
- 3 tablespoons sugar
- 1/2 cup dried skim milk
- 1 1/2 teaspoons salt
- 1 egg, well beaten
- 3 tablespoons soft butter
- 4 cups all-purpose flour

Step 1
In a large bowl, combine water, yeast, sugar and skim milk. Stir until yeast is dissolved. Add salt, egg, butter and half the flour and beat until very smooth. Add remaining flour to make a stiff dough. Knead until very smooth adding a little more flour if needed (10 minutes). Return to buttered bowl. Turn and let rise until doubled.

Turn out carefully onto floured board. Pat gently being careful not to break any more air cells than necessary to 1/2 inch thick. Cut with a 3 inch cutter. Slip onto wax paper sprinkled with cornmeal. Cover and let rise until double. Bake slowly on ungreased griddle. Makes 12 to 16.
