Ingredients

  • 1 1/2 cup dried split peas
  • 1/2 medium onion chopped
  • 1 lg. carrot, diced
  • 1 rib celery, diced
  • 1 lg clove garlic, minced
  • 7 cups chicken broth
  • 1 cup water
  • 1/2 cup uncooked barley
  • 1/8 tsp. salt
  • white pepper to taste

Step 1

In large sauce pan combine peas, onion, carrot, celery, garlic and 6 cups of broth. Bring to a bowil and then lower heat and simmer in uncovered pot for 2 hr. stirring occasionally. If liquid is low add water. In small covered pot over low heat cook barley in 1 cup of broth and 1 cup of water for 40-60 minutes until tender. When vegetable mixture is done, puree. Return puree to pot and stir in barley, herbs and pepper. Heat and stir.
