- 3 eggs, separated
- 3 oz. reduced fat cream cheese
- 1 t. baking powder
- Pinch of salt

Step 1
Preheat oven to 300 degrees. Spray a baking sheet with Pam or line with parchment paper.
In a large bowl, whip egg whites until very stiff peaks form. Set aside. Using the same beaters, blend cream cheese with egg yolks, salt and baking powder until smooth.
Fold about half of the whites into the yolk mixture to lighten. Fold in the remaining whites until just the large streaks of white disappear. Mound into flattened rounds of desired sizes on the prepared baking sheet. Bake for 30 minutes - depending on size. They should be golden and crisp to the touch.
Cool for a few minutes on the pan. Remove to a wire rack to cool completely. Store in an airtight container or plastic bag.
