Ingredients

  • 2 cups flour
  • 6 tablespoons powdered buttermilk
  • 1 1/2 teaspoons soda
  • 1/4 cup melted shortening
  • 1 teaspoon salt
  • 2 eggs, unbeaten
  • 2 cups water (or omit butter-
  • milk powder and water and use 2 cups fresh buttermilk)

Step 1

Mix or sift dry ingredients thoroughly. Add remaining ingredients. Stir lightly to just moisten dry ingredients. Mixture will be thick and lumpy. Drop by tablespoons onto lightly greased griddle, spreading batter with spoon. Turn cakes as soon as browned on bottom. Cook till other side is browned. Makes 20 4-inch pancakes.
