  • 1 1/2 * 1 1/2 cups chopped celery
  • 1 * 1 pound extra lean ground beef
  • 1 * 1 cup thinly sliced onions
  • 1/2 to 1 * 1/2 to 1 cup chopped green bell pepper
  • 1 * 1 can (14.5 ounces) diced tomatoes
  • 2 * 2 teaspoons salt
  • 1/4 * 1/4 teaspoon seasoned pepper
  • * bell pepper rings for garnish

Step 1

In a greased 8x12-inch baking dish, seasoning each layer with a little salt and pepper, layer the potatoes, celery, ground beef, onions, bell pepper, and diced tomatoes. Sprinkle with remaining salt and pepper and top with bell pepper rings. Cover with foil and bake in a preheated 350° oven for about 1 1/2 to 2 hours, until vegetables are tender.
