Smoked Turkey Wings and Red Cabbage

Ingredients
- 2 tablespoons Olive Oil
- 2-3 Smoked Turkey Wings (cut into thirds at the joint)
- Kosher Salt
- Freshly Ground Black Pepper
- 2 cups Onion (finely sliced)
- 2 cups Carrot (peeled and finely sliced into matchsticks)
- 2 teaspoons Toasted Cumin Seeds
- 8 cups Red Cabbage (sliced 1/4" thick)
- 2 cups Tart Apples (grated on the large holes of a box grater)
- 1/4 cup Red Wine Vinegar
- 1 cup Freshly Squeezed Orange Juice
- 1/4 cup Brown Sugar
- 2 tablespoons Dijon Mustard

Preparation
Step 1
Preheat 325°F.
Place a Dutch oven over medium high heat. When the pan is hot add the Olive Oil along with the smoked Turkey Wings. Cook until the Wings are golden brown on each side then remove from the pot and set aside. Then add the Onions and Carrots and a pinch of Salt. Push them to one side of the pan and add the Cumin Seeds to the pan to toast for 2 minutes. Stir together and cook until the vegetables begin to soften (5 minutes). Stir in the Cabbage and Apples along with their juices. Add the Turkey Wings back into the pot. Cover and cook until the Cabbage starts to wilt (3-5 minutes).
In the meantime whisk together the Orange Juice and Brown Sugar. Reduce the heat to medium low. Pour in to the Cabbage mixture and season with a good amount of Salt and Pepper. Add the Orange juice mixture and the Vinegar to the pot. Cover the pot and place in the oven to cook for 45 minutes. Stir in the Mustard then taste for seasoning, adding more Salt and Pepper if necessary. Serve the Cabbage with the Smoked Turkey Wings on top.
