Lucerne® No-Bake Salted Caramel Cheesecake Bites

- 1/3 cup Lucerne® Salted Caramel Creamer (or creamer flavor of choice)
- 2 – 8oz packages Lucerne Cream Cheese (full fat)
- 2 cups Lucerne Heavy Whipping Cream
- 1/3 cup Safeway Sugar (white granulated)
- 1 pack (9 full cracker) Safeway Graham Crackers (crushed)
- 1/3 cup Safeway Dark Brown Sugar (packed)
- 1/2 cup Lucerne Unsalted Butter (melted)

Preparation

Directions
1. Spray a 9” x 9” baking pan with nonstick spray.
2. Combine graham cracker crumbs, brown sugar, and melted butter together.
3. Press the crumb mixture into the pan, making an even layer of crumbs on the bottom and having the sides come up about an inch.
4. In the bowl of a stand-up mixer, with a whip attachment, on low speed combine cream cheese and creamer. Increase to medium high as the creamer gets incorporated with the cream cheese.
5. Turn off mixer and add heavy cream and sugar. Turn mixer back on low and gradually increase speed. Whip for about 5 minutes, or until the mixture looks mostly smooth, scraping bowl as needed.
6. Pour cream cheese mixture into the crumb crust and use a spatula to smooth it into the pan.
7. Freeze for an hour to set the cream cheese mixture.
8. Remove from freezer, let stand for about 5 minutes before cutting into 1” squares. Garnish each square with Lucerne Whipped Topping of choice.
