Ingredients

  • 1/2 cup sugar
  • 1/2 cup firmly packed brown sugar
  • 1/2 cup LAND O LAKES® Butter, softened
  • 1/2 cup creamy peanut butter
  • 1 egg
  • 1/2 teaspoon vanilla
  • 1 1/4 cups all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 (13 ounce) package miniature
  • Peanut butter cups, unwrapped

Preparation

Step 1

Heat oven to 350°F. Spray miniature muffin pan with no-stick cooking spray. Set aside.

Combine sugar, brown sugar, butter and peanut butter in large bowl. Beat at medium speed, scraping bowl often, until creamy. Add egg and vanilla; continue beating until well mixed. Reduce speed to low; add flour, baking soda and salt. Beat, scraping bowl often, until well mixed.

Shape dough into 1-inch balls. Place each ball into prepared miniature muffin cup. Bake for 11 to 13 minutes or until lightly browned.

Remove from oven; press peanut butter cup in center of each cookie. Let cool 30 minutes. Remove from pan. Cool completely.
