French Tomato Soup

Ingredients

  • 3 med tomatoes, peeled and quartered
  • or one 14 oz can tomatoes, cut up
  • 1 1/2 c water
  • 1/2 c. chopped onion
  • 1/2 c diced celery
  • 3 oz tomato paste
  • 2 tbs fresh cilantro or parsley
  • 2 tsp chicken bouillon granules
  • 2 tsp lemon juice
  • 1 tsp sugar

Preparation

Step 1

In a large saucepan combine all ingredients. Bring to a boil. Reduce heat, cover and simmer about 20 minutes. Puree the soup. Garnish with cilantro/parsley if desired. Makes 4 cups.
