Shrimp and zucchini scampi

Ingredients

  • 1 1/2# shrimp
  • 2 med. zucchini, sliced
  • 4 cloves garlic, chopped
  • 4 T butter
  • 3/4 c. White wine
  • 1/8 tsp salt
  • 1# linguine
  • 1/4 cups pasta water 2 tsp grated lemon peel
  • Chopped parsley

Preparation

Step 1

Cook shrimp in 2 T oil. Transfer to plate
To skillet, add zucchini, garlic, butter. Cook 3 min. Add wine and salt, stirring and scraping.
Toss vegetables with shrimp, cooked linguine, pasta water, lemon peel and parsley.
