Fluffy White Icing

Ingredients

  • 1/2 cup water
  • 1 1/2 tbs light corn syrup
  • 1 1/2 cups granulated sugar
  • 1/2 tsp cream of tartar
  • 1/2 tsp salt
  • 2 egg whites, room temperature
  • 1 1/2 tsp vanilla

Preparation

Step 1

1. Place water, corn syrup, sugar, cream of tartar and salt in sauce pan. Stir over medium heat until sugar is completely dissolved, forming a syrup.
2. Place egg whites in bowl of electric mixerand whip until egg whites begin to hold shape about 45 seconds. Continue on Speed 10, slowly pour hot syrup into egg whites in a fine stream about 1-1 1/2 minutes. Add vanilla and continue whipping about 5 minutes or until frosting looses gloss and stands in stiff peaks. Frost cake immediately
