Ingredients

  • 2 loafs brioche (no crust cut into cubes and toasted)
  • 2 eggs
  • 1 cup chicken stock
  • 1/2 cup cream
  • Zest and juice of 2 oranges
  • 2 oz olive oil
  • 1 red onion small diced
  • 1 stalk celery small diced
  • 2 closves minced garlic
  • 6 leaves chopped sage
  • 1 cup toasted slivered almonds
  • 1 tbl spoon salt

Preparation

Step 1

In a large mixing bowl add toasted bread
Whisk together eggs, chicken stock, heavy cream and orange juice and zest
Pour liquid over bread and let sit from 1-2 hours
Heat a large saute pan over medium heat and add olive oil
When oil is hot, add onion and celery and saute for 2 more mins
Add remaing ingredients and cook for 1 more minute and stir together
Add vegetabe mix to bread and mix thoroughly
Place in small muffine tins and bake at 375 for 45 minutes
Add garlic and cook for 1 more minute
