Ingredients

  • 10 oz Rotini Pasta
  • 12 oz Bad of Eat Smart Vegetables (any blend)
  • 8 oz Bottle of Italian Dressing Lite
  • 1 Tomato medium, chopped
  • 2 Sliced green onions
  • 1/2 Cup reduced-fat feta cheese
  • 1 Cup Sweet Bell Pepper chopped (green, red or yellow)
  • 1 Cucumber peeled seeded chopped
  • 1/2 Cup Pitted Kalamata Olives
  • 1/3 Cup Chopped Italian Parsley
  • 1/4 Cup Sun Dried Tomatoes in Olive Oil chopped.
  • Salt & Pepper to taste

Preparation

Step 1

Cook pasta according to package directions. Drain and cool. Set aside. Bring a large pot of water to a boil. Add Eat Smart Vegetables and cook for 2 minutes or until slightly tender but still crisp, drain & rinse with cold water.
In a large bowl, mix pasta & Eat Smart Veggies with 1/2 Cup of dressing. Refrigerate 2-4 hours to marinate. Add remaining ingredients. Mix and serve Bon-appetit.
