Ingredients
- 10 oz Rotini Pasta
- 12 oz Bad of Eat Smart Vegetables (any blend)
- 8 oz Bottle of Italian Dressing Lite
- 1 Tomato medium, chopped
- 2 Sliced green onions
- 1/2 Cup reduced-fat feta cheese
- 1 Cup Sweet Bell Pepper chopped (green, red or yellow)
- 1 Cucumber peeled seeded chopped
- 1/2 Cup Pitted Kalamata Olives
- 1/3 Cup Chopped Italian Parsley
- 1/4 Cup Sun Dried Tomatoes in Olive Oil chopped.
- Salt & Pepper to taste

Preparation
Step 1
Cook pasta according to package directions. Drain and cool. Set aside. Bring a large pot of water to a boil. Add Eat Smart Vegetables and cook for 2 minutes or until slightly tender but still crisp, drain & rinse with cold water.
In a large bowl, mix pasta & Eat Smart Veggies with 1/2 Cup of dressing. Refrigerate 2-4 hours to marinate. Add remaining ingredients. Mix and serve Bon-appetit.
