Taco Meat Recipe
Love this recipe! I put beef, onion, green pepper if I have it...in the skillet all at the same time, not adding the beef tallow or ghee, and brown it all together. I put the burner on low and brown it very slowly. I add the seasoning and ketchup after the hamburger is browned. Very Good! I put the beef on a bed of spinach, add kidney beans, chopped tomatoes, cheese, guacamole and sour cream with tortilla chips on the side of a delicious taco salad!

Ingredients
- 1 lb. ground beef (or veal or chicken)
- 2 Tbsp beef tallow or homemade ghee
- 1/2 onion, chopped
- 1 carrot, diced
- 2 Tbsp homemade taco seasoning
- 1/4 cup homemade ketchup

Heat a pan to medium high heat. Add the fat and then the onion and spices. Saute the onion with the spices for a few minutes. Add the meat and the carrots and saute another few minutes. Add the ketchup and stir to combine. Lower the heat to medium low and cook for another 5-10 minutes until the meat is dry and crumbly.
While the taco meat is cooking, heat up the rice and beans in a pot on the stove and make the guacamole. Then assemble all of the fixings onto a serving platter. Serve the tacos up family style and everyone can assemble their own.
