Ingredients

  • 2 egg yolks
  • 1 stick butter, cut into pieces
  • 3 tbl fresh lemon juice
  • salt and pepper, to taste

Step 1

Mix together in a medium glass bowl the egg yolks and lemon juice. Whisk until slightly thickened and frothy.

Place the glass bowl, over a large pot of simmering water (a double boiler). Do not let the water make contact with the bottom of the glass bowl.

Add butter pieces one by one, whisking after adding in each piece, until it has melted into the sauce.

Keep whisking until thickened. Add salt and pepper to taste. You could also add cayenne pepper or hot sauce to spice it up a bit.

If it should begine to curdle, remove from heat and add 1 tbl hot water. You could also throw the entire mixture in a blender and blend it, but the texture will be slightly altered.

Great on eggs benedict, asparagus, broccoli, or my favorite....steamed artichokes.
