Shepard's Pie

Ingredients
- left over beef roast
- 2 tbs olive oil
- 1/2 white onion, fine dice
- roasted potatoes, chopped
- 3 carrots
- 2 stalks celery, course chopped
- 1 c red wine
- 1 bay leaf
- 2 c beef broth
- 1/2 c milk
- 2 tbs flour
- 1 tsp Dijon mustard
- 1 tbs Worcestershire sauce
- 1 c peas
- 1 c corn
- salt and pepper to taste

Preparation
Step 1
Heat olive oil over medium heat
Create mirepoix with onion, carrots and celery. Saute until onions are soft and translucent.
Add potatoes and heat through.
Add wine, reduce to 1/2 volume
Add broth and bilk. Bring to boil, reduce heat ans simmer for a couple of minutes
Add flour to desired consistency.
Add mustard, Worchestershire and beef. Stir and continue to heat on simmer.
Add peas and corn and season to taste.
Cover with crust
Bake until crust is golden brown and filling is war.
