Ingredients

  • 1-2 Tbs. oil, extra virgin olive or coconut
  • 1 medium onion, chopped
  • 1 green pepper, chopped
  • 1 jalapeno pepper, chopped
  • 3 cloves garlic, minced
  • 1 tsp. cumin
  • 1/2 tsp. chili powder
  • 1/2 tsp. oregano
  • 1/2 tsp salt
  • 2 c. cooked, shredded chicken
  • 2 cans white beans, drained and rinsed, or 4 c. cooked beans
  • 2 c. chicken stock or broth
  • 1 pint (15 oz. can) diced tomatoes with juice
  • 8 oz. Monterey Jack cheese, cubed or shredded

Preparation

Step 1

1. In a soup pot saute onion, green pepper, and jalapeno until soft.
2. Then add the garlic and cook it until you can smell it.
3. Next add the four spices and cook for one minute
4. Add the other ingredients (EXCEPT for the cheese) and cook until heated through.
5. Stir in the cheese and serve

Note: to freeze this soup I am going to leave out the cheese and stir that in when I reheat it and serve the soup.
