Homemade Cheez-its

Ingredients

  • 1 c. grated sharp cheddar
  • 4 T. unsalted butter, softened
  • 1 t. sea salt
  • 1 c. flour
  • 2 T. ice water

Preparation

Step 1

Preheat oven to 350 deg. Mix together softened butter, cheese, and salt in a bowl. Add flour and mix until well combined. Slowly add ice water while mixing, until dough begins to come together. Shape dough into 3 balls and wrap in plastic wrap and refrigerate for 30 min, or until ready to bake. Take dough out of refrigerator and return to room temperature. Set it on a sheet of wax paper and roll each ball out until about 1/8in thick. Cut into 1 inch squares using a pizza cutter, then transfer dough on wax paper to a cookie sheet. Place in preheated oven for 15 minutes. After 15 minutes flip crackers and cook for another 10min, or until crispy.

(I will often double the recipe and use 1 cup of white flour and 1 cup of whole wheat, just to add a little extra nutrition. These cheese crackers are always a hit at our house!)
