Ingredients

  • 1 (16 ounce) package extra sharp
  • Cheddar cheese,shredded
  • 1 cup mayonnaise
  • 1 teaspoon red pepper
  • 1 cup chopped pecans
  • 1 (16 ounce) package medium Cheddar
  • cheese, shredded
  • Parsley sprigs
  • Strawberry preserves (optional)
  • 1 small onion, grated

Step 1

Combine first 5 ingredients, and mix well. Sprinkle about 1/2 cup pecans in an oiled 7-cup ring mold, and press cheese mixture into mold. Chill until firm.
Unmold on platter, and pat remaining pecans onto cheese ring. Garnish with parsley springs. Serve on crackers with strawberry preserves on top, if desired. Yield: 1 cheese ring.
