Banana Oatmeal Cupcakes

Healthy, moist and nutritious Banana Oatmeal Cupcakes. A perfect start to the day or on the go snack!

Ingredients

  • 3 mashed bananas, the riper the better
  • 1 cup vanilla almond milk
  • 2 eggs
  • 1 tablespoon baking powder
  • 3 cups oats
  • 1 teaspoon vanilla extract
  • 3 tablespoons blueberries

Preparation

Step 1

In a bowl, combine all ingredients and mix well. Fill paper-lined muffin cups two-thirds full with batter.

Bake at 380 F. for 20 minutes or until cupcakes test done. Cool in pan 10 minutes before removing to a wire rack.
