Ingredients

  • 2 lbs onions - thinly-sliced (I used a mandoline to get perfect slices)
  • 2 teaspoons salt
  • 1 1/2 cups oil (I use refined coconut)

Preparation

Step 1

Toss the salt and onions in a microwaveable bowl. Put in microwave for 5 minutes.

Put the onions on a paper towel-lined tray to dry off any excess water.

Heat up the oil in a pan (medium-highish). Let them cook for 25-30 minutes. When you get near the 20 minute mark, just keep watch on them so they don't brown too fast. Remove them with a slotted spoon onto a tray to let them dry out.
