Ingredients
- 1 3 lb package of frozen peas
- 4 teaspoons lemon juice
- 1 to 2 cups of mayonnaise (to taste)
- 2 tablespoons grated onion
- 2 teaspoon dijon mustard (dry mustard)
- 1 pound crisp bacon crumbled
- salt and pepper to taste
Preparation
Step 1
Partially thaw peas.
Boil a big pot of water with 2 teaspoons lemon juice. Blanch peas in boiling water for 60 seconds (bring water to a boil again - then take out peas). Do not leave peas in water too long, they get soft.
Drain peas well and cool.
In a small bowl, mix together mayonnaise, grated onion, mustard and two teaspoons lemon juice and crumbled crisp bacon. Mix well.
Then mix the small bowl ingredients in the cooled peas, season with salt and pepper to taste.
Chill and serve.
