Honey and Thyme-Brined Turkey Breast

Moist, tender turkey breast carries subtle hints of honey and thyme.

Ingredients
- 7 cups water, divided
- 2 tablespoons fresh ground black pepper
- 6 fresh thyme sprigs
- 1/2 cup kosher salt
- 1/3 cup honey
- 1/4 cup packed brown sugar
- 2 cups ice cubes
- 1 (6 lb.) bone-in turkey breast
- 2 tablespoons olive oil
- 1 tablespoon chopped fresh thyme
- 1 tablespoon fresh ground black pepper
Preparation
Step 1
In a microwave-safe container, combine 1 cup water, 2 tablespoons black pepper and thyme sprigs. Heat on high until boiling.
Add 6 cups water, salt, honey and sugar. Stir until salt and sugar dissolve.
Pour brine into a 2-gallon heavy-duty ziptop bag.
Add ice and turkey and seal the bag. Place in a large container in case of leaks.
Refrigerate 24 hours, turning bag occasionally.
Remove turkey from bag and discard brine.
Pat turkey dry using paper towels.
Rub turkey with oil.
Mix together 1 tablespoon black pepper and chopped thyme.
Preheat oven to 400 degrees.
Place turkey on a rack in a roasting pan.
Bake for 1 hour or until meat thermometer inserted into the thickest portion reads 165 degrees.
Remove from oven, cover with foil and let stand for about 15 minutes.
Carve the turkey breast and place on a platter for service.
