Ingredients

  • 3 1/2 cups unsifted flour
  • 2 1/2 cups sugar
  • 2 teaspoons baking soda
  • 1 1/2 teaspoons salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 2 cups puréed cooked or canned pumpkin
  • 1 cup corn oil
  • 2/3 cup water
  • 4 eggs
  • Golden Spread
  • 1/2 cup margarine or butter
  • 1/2 cup dark corn syrup

Step 1

Grease and flour two (9 x 5 x 3-inch) loaf pans. Stir together in large bowl flour, sugar, cinnamon, and nutmeg. Stir together pumpkin, corn oil and water. Add eggs, one at a time, beating well after each addition. Make well in center of flour mixture. Add pumpkin mixture and stir just until flour is moistened. Pour into prepared pans. Bake at 350 degrees for 1 hour or until bread tests done. Remove from oven. Cool 10 minutes before removing from pans. Cool on rack. When completely cool, wrap in plastic film or foil and store overnight. Serve with Golden Spread.

Golden Spread.

Stir 1/2 cup margarine or butter until smooth and fluffy. Gradually add 1/2 cup dark corn syrup, beating well.
