Mexican Casserole Dip

A cheesy rice & taco Mexican casserole which is great with tortilla chips or rolled in a flour tortilla.

Ingredients
- 1 lb: ground beef
- 1 cup: rice
- 1 jar: salsa
- 1 can: Rotel diced tomatoes
- 1 package: taco seasoning
- 1/2 package: Velveeta (you can use less if you want)
Preparation
Step 1
1) Brown ground beef & drain.
2) Cook rice in seperate container.
3) Mix together beef, cooked rice, salsa, & rotel in crockpot
4) Stir in taco seasoning with about 1 1/2 cans (using the rotel can) of water
5) Keep it on low heat for an hour or more.
6) Add in the velveeta, cut into small cubes (so it melts easier)
7) Keep it heating until cheese is melted & at a good consistancy.
Serve with tortilla chips & sour cream
