Slightly sweet, crazy tender chuck roast with potatoes and carrots.

((I did not cook the potatoes with the roast, but instead opted to use them for homemade Garlic Mashed Potatoes to serve with the roast. That recipe is filed in my Side Dishes cookbook.))

Ingredients

  • 2 1/2 - 3 pound Chuck Roast, trimmed of excess fat
  • 1 can cream of mushroom soup
  • 1 packet (dry) onion soup mix
  • 1 (12 oz) can Coke
  • 2 -3 pounds small red potatoes, halved
  • 1 pound whole carrots, cut in chunks

Preparation

Step 1

Preheat a 6-qt. slow cooker on Low setting.

Place roast in slow cooker. Sprinkle the dry soup mix over the roast. Arrange the vegetables around roast.

In a small bowl, whisk together the soup and can of Coke then pour over the roast and veggies.

Cook on Low for 6-8 hours. The juices make a yummy gravy for potatoes or rice.
