Ingredients
- 1 lb lean ground beef
- 1/2 lb ground pork
- 1 lg egg, lightly beaten
- 1/2 c grated yellow onion
- 1/3 c panko bread crumbs
- 1 T Worcestershire sauce
- 1 T yellow mustard
- 1 1/4 t Creole seasoning
- 2 c barbecue sauce
- 1 c apricot preserves
- 2 cloves garlic, minced
- 1 T grated fresh ginger
Preparation
Step 1
Spray 4-6 qt. slow cooker with cooking spray.
In lg bowl, stir together beef, pork, egg, onion, bread crumbs, Worcestershire, mustard & Creole seasoning. Shape mixture into 1 1/2 in. balls.
In med bowl, stir together, BBQ sauce, preserves, garlic & ginger. Spread 1/2 c mixture into bottom of prepared slow cooker. Add meatballs to slow cooker; pour remaining sauce all over meatballs.
Cover & cook on high until meat thermometer inserted in center of meatballs registers 160 degrees, about 4 hrs.
Note: Lean ground beef works best in this recipe; ground beef with higher fat content can cause the finished sauce to be a bit greasy,
