Ingredients
- 1 T butter
- 2 (5 oz) boneless, skinless chicken breasts, cubed
- Salt & freshly ground pepper to taste
- 1 T EVOO
- 4 green onions, chopped
- 2 green zucchini, cut in half lengthwise & into 1/4 in. slices
- 8 lg fresh Mushrooms, sliced
- 1 T all purpose flour
- 3/4 c heavy whipping cream
- 1 T chopped fresh parsley
Preparation
Step 1
Melt butter in skillet over med heat & cook chicken until slightly browned, stirring frequently, 5-7 min. Season with salt & pepper & transfer to a plate. Cover with foil or a bowl to keep warm.
Heat oil in same skillet over med heat & cook green onions until soft, about 2 min. Add zucchini slices & cook until softened, about 5 min. Add mushrooms & stir to combine. Return chicken to skillet & sprinkle with flour. Stir in cream & cook until sauce has thickened, 3-5 min. Sprinkle with chopped parsley.
