- 1-Lb. carrots.
- 2 -eggs.
- 1/2-cup chopped onion.
- 1-cup chopped celery.
- 1-Tbs. parsley.
- 3/4-cup margarine, melted.
- 1-Tsp. salt.
- 8-cups cubed day-old bread.

Preparation
Step 1
In a sauce pan, cover carrots with water; cook until tender. Drain and mash.
In a large bowl, beat eggs; add onion, celery, parsley, margarine and salt.
Stir in carrots. Add bread cubes and mix well.
Pour into a greased (PAM SPRAY), 2-qt.
baking dish. Bake, uncovered at 350 degrees for 30 to 40 minutes or until set.
