Ingredients

  • 1 1/2 lb hot or sweet Italian
  • sausage
  • 3 large potatoes (cut into bite
  • sized chunks)
  • 2 medium onions (cut in
  • quarters)
  • 2 crushed garlic clove
  • 3/4 tsp salt
  • 1 small head escarole (chopped)

Step 1

In large skillet over medium heat, cook sausage till browned on all sides. Remove from pan and set aside. Cook potatoes in sausage fat along with onions and garlic, stirring frequently till browned. Cut sausage into bite sized pieces and return to skillet. Add 1/4 c water and salt. Bring to a boil, reduce heat to simmer and cover, simmering for about 25 minutes. Add escarole, cover and simmer for an additional 5 minutes or until the vegetables are tender.
