Step 1

Preheat oven to 500 degrees for about 30 minutes. Take the roast out of refrigerator and and let sit for about an 2 hours. Roast meat for 5 minutes per pound at 500 degrees and then immediately lower the temp to 325 degrees. Roast for an additional hour, making sure not to open oven door during roasting, this keeps the temperature from lowering any further. KEEP OVEN DOOR CLOSED THROUGHOUT - that's the secret. Let the roast sit on cutting board for about 15 minutes and thinly slice.
