Peach Clafouti

Ingredients

  • 1 T butter, softened
  • 1/2 c sugar, divided
  • 2 c peach slices
  • 3 lg eggs
  • 1 c heavy cream
  • 6 T flour
  • 1 t vanilla
  • 1/2 t almond extract
  • 1 t Lemon zest
  • 1/4 t salt
  • Confectioner's sugar

Preparation

Step 1

Preheat oven 350 degrees. Butter a 10 in baking dish. Sprinkle with 1 T sugar evenly over bottom and sides of dish. Arrange peaches in a concentric circle over bottom of prepared dish.

In the container of a blender, add eggs, cream, flour, extracts, zest, salt and remaining sugar; process until well blended.

Pour batter over peaches and bake for 40-45 min or until golden brown. Serve warm or at room temp. Sprinkle with powdered sugar
