  • 4 tablespoons mayonnaise, or as needed
  • 1/2 cup seasoned bread crumbs

Step 1

Preheat the oven to 350 degrees F. Line a baking sheet with aluminum foil.

Place the bread crumbs in a shallow dish. Coat each slice of eggplant on both sides with mayonnaise. Press into the bread crumbs to coat. Place coated eggplant slices on the prepared baking sheet.

Bake for 20 minutes in the preheated oven, until golden brown. Flip slices over, and cook for an additional 20 to 25 minutes to brown the other side.

WOW! This is the only baked eggplant recipe my husband has ever liked. He always asks for fried eggplant. He loved this and said I can make it often, and instead of fried. I switched it up a bit: - mixed chopped garlic, oregano and parmesan with the mayo - after dipping in the bread crumbs, I sprayed with olive oil for a crisp crust and added a dash of cayenne - Be sure to finish under the broiler for crunchiness Serving with a sauce is optional - I liked the crispness, and my husband liked it with a swoosh of low fat alfredo sauce. Next time I'll try it with a medley of sauces - all on the side: pesto, red sauce, and alfredo. Enjoy!
