Pomegranate Molasses

This pomegranate molasses is simple to make and adds a great touch of tang and sweetness to whatever you add it to!

Ingredients
- 4 cups pomegranate juice
- 1/3 cup honey, local preferred {raw honey will likely lose its "raw benefits" given the cooking temperature and time}
- Juice and zest of one lemon
- Pinch of Real salt or Himalayan sea salt
Preparation
Step 1
Pour ingredients into a small saucepan and bring to simmer over medium heat.
Continue simmering, reducing the heat if necessary, stirring fairly often. Let the mixture reduce by about three quarters. It will thicken more as it cools.
Store in the fridge in a half-pint Mason jar for up to a month.
