Cheesy Spinach Stuffed Chicken Breast

Ingredients

  • Breading:
  • 4 Boneless, Skinless Chicken Breasts
  • 6 Oz Cream Cheese
  • 2 Cups Spinach
  • 1/2 Tsp Minced Garlic
  • 1/3 Cup Grated Parmesan
  • 1/2 Cup Grated Cheddar Cheese
  • 1/4 Tsp Black Pepper
  • 1/8 Tsp Nutmeg
  • 1/4 Tsp Salt
  • 1/3 Cup Almond Flour
  • 1/3 Cup Grated Parmesan
  • 1/2 Tsp Parsley
  • 1/2 Tsp Salt
  • 1/8 Tsp Onion Powder
  • 1/8 Tsp Garlic Powder
  • 2 Eggs
  • Olive Oil

Preparation

Step 1

Combine cream cheese, spinach, garlic, parmesan, cheddar, pepper, nutmeg and salt in bowl and mix well. Trim chicken breasts of any fat and cut in half. Put chicken between plastic wrap on cutting board and pound until thin. Put some of the spinach mixture in center of chicken breast and squeeze the chicken around it until sealed in an oval shape. Chill the chicken for 15 minutes. Combine breading ingredients. Heat oil in frying pan. Dip chicken into beaten egg and then breading mix. Fry in pan until all sides golden brown. Bake at 375 for 18 - 22 minutes until done.
