  • Standing rib roast
  • 2 tsp dijon mustard
  • 2 tsp dry mustard
  • 2 tsp sugar
  • salt/pepper
  • potatoes

Step 1

Mix the dijon, mustard, sugar and rub over standing rib roast. Let set for 2 hours. Score the outer layer of the roast. Season with salt/pepper. Roast at 450 degrees for 15 minutes. Then base every 15 minutes to 125 degree temp (rare.) Peel potatoes and cut into big pieces. Place in cold water and boil for just 5 minutes. Score the outer layer and put the pan drippings from the roast on to potatoes to moisten. Roast at 400 degrees.
