Creamy Christmas Mashed Potatoes

Ingredients
- 5 lb pared & quartered russet
- potatoes
- 2 tsp salt
- 8 oz pkg cream cheese (at
- room temp)
- 3 T chopped chives (can use freeze
- dried if fresh isn't
- available)
- 4 T butter
- 1/8 tsp white pepper (or less)
- 1 c heavy cream
- paprika
- additional butter

Preparation
Step 1
Boil the potatoes in 1 tsp salted water till tender (about 30 minutes) Drain and whip till smooth. Add cubes of cream cheese, butter, 1 tsp salt, pepper & chives blending well. Slowly add heavy cream and whip till creamy. Pour into greased 13 X 9 X 2 pan. Dot the top with additional pats of butter and sprinkle paprika on top. Bake at 375 degrees for 30 minutes, until bubbly.
Can either be baked at once or cover with foil overnight.
