  • 12 eggs
  • 1/4 cup romano grating cheese
  • 1 tsp salt
  • Pepper
  • 1 cup Progresso Italian bread crumbs
  • Olive Oil
  • Freshly chopped mint

Step 1

Mix all ingredients well. Put enough of the egg mixture in the hot oil to cover the bottom of pan, you will be adding more as you go along. Flip the one end over and push down as it cooks, smooth out the egg mixture as you go along, while continuously rolling the mixture. Continue this process while adding more of the egg mixture on the opposite end each time it starts to cook. Add a drizzle of more oil if it is not smoothing out and sticking to the pan. It is sort of like doing a jelly roll. When finished remove from pan, cool slightly and cut into thin slices.
