  • 6 sweet potatoes
  • 2 slightly beaten eggs
  • 1/2 c heavy cream
  • Melted stick of unsalted butter
  • 1/2 c brown sugar
  • 1/4 c honey

Step 1

Preheat oven to 400 degrees.

Boil unpeeled sweet potatoes for about 45 minutes. Peel and mash into eggs and heavy cream. Add butter, brown sugar and honey and whip until light and smooth . Bake at 400 degrees for about 40 minutes. Serve immediately.
