Chicken Tamale Muffins

  • 6 cups Maseca for tamales
  • 3 cans Chicken broth
  • 1 cup Maizete corn oil
  • 2 tea. salt
  • 1 tea. baking powder
  • 1 large rostisserie chicken
  • 1 can green tomatillos sauce

Preparation

Step 1

With an electric mixer, blend the Maseca, corn oil, salt, baking powder and the chicken broth to obtain a consistent mixture.

Shred the chicken and marinate in the green tomatillo sauce.

Add the marinated chicken to the mixture and keep blending to obtain a consistent mixture.

Pour mixture evenly into 4" wide muffin molds.

Bake for 20 minutes at 350 degrees.
